I'm trying to choose a free schematic drawing software, and like the way these two look. I've read related questions about circuit drawing software as well. I like Fritzing, but it lacks some components. For example, I cannot get that RS232 component into it.
I do not think there is good software for this. Most people use Visio or a clone. For example, here's a library of connectors for Visio. And you can change connector colors for different wire colors, add notes for sizes, etc. Otherwise I think there's not much - this is one of those million-dollar ideas that I stare in the face and ignore on a daily basis.
I'll take a guess though I don't know for sure. The key words here are publication quality and professor. LaTex does a very nice job when used in conjuction with CircuitTikZ. LaTex is very much used for typesetting documents in the university setting.

The top diagram is drawn in Eagle. Eagle is scalable and libraries are freely available. Creating own libraries is also fairly easy.
Second diagram I'm not too sure but it could be drawn using ms-paint. Drawing style is more enthusiastic than professional.
