I'm working on a project that involves this LCD for a PCB.
From the drawing, I can easily tell how to connect the pins. But I am not sure how to tell from the drawing how the display should be mounted. I've heard of other displays that will have little arms or bars you can solder down. Not sure what the appropriate way would be to go for this display.
What would be the best way to attach this LCD to a PCB?
The smallest standard product LCD glass I could find is one from Varitronix that is 20.3mm x 38mm. It offers eight digits instead of 6. According to the data sheet for this part it is available with pins attached which adds a very small amount of additional width.
Note that for smaller sizes it is generally required to work with a vendor such as this to get a custom LCD glass made to your size requirements. Smallest size will generally imply that you use zebra strip for connections and a custom tooled case / holder to bring the display into proper contact and orientation with the circuit board. Do note that for small form factor displays it is common that the digit height is approximately one third the overall width of the LCD glass with the rest being used up by the contacts and sealing area.

There are no individual pockets in LCD panels. They are two parallel glass plates with special films applied. The plates are held apart with tiny beads (PMMA or Glass)- on the order of 10's of microns.
When two adjacent pixels are set at different voltage levels the LC between the pixels are at an indeterminate state due to the ambiguous fields. In the industry these are called disinclination lines. To hide these lines a black mask is applied between the filters and to increase contrast.
Disinclination lines do not appear in every LCD technology but the black mask increases perceived resolution and display "crispness".

From the drawing, I don't see any mounting provision.
I expect that the display is intended to be mounted directly to the front panel of the equipment, either by clamping or by using glue. It could also snap into a suitable molded bracket on a plastic panel.
If you want to mount it to a PC board, you will probably have to design some standoff/clamp assembly yourself.
