I know I've seen the symbol before, it's something like a circle with an open triangle facing in the direction of current flow with a line through the middle. I'm specifically thinking of the transducers in electric guitar pickups. I've seen the symbol before but now I can't find it.

It's a fixed current source (DIN 40700 style). With an arrow pointing to it an externally controlled current source. In this case it's a CCCS (Current Controlled Current Source), where the generated current is the controlling current divided by 500, resp. 1000, depending on the device.

We usually draw the inductor symbol as a coil of wire which can be very misleading. You have to take a look at the B-field around a straight wire then all the sudden your analogy makes perfect sense.
