Does anyone know of an equivalent "default interface X" comand for the Cisco Nexus 5000 platform?

Cisco is pretty consistent with using the no in front of a command to remove or disable the command. Cisco provides many documents, such as Cisco Nexus 5000 Series NX-OS Software Configuration Guide which detail how to configure SPAN, including removing it:
You add a source port to a SPAN session with:
switch(config-monitor)# source interface <type> <slot> / <port> [ rx | tx | both ]
You remove a source port from a SPAN session with:
switch(config-monitor)# no source interface <type> <slot> / <port>
This should work as long as you configure them properly.

It actually depends on the NX-OS version running on the switch (and hence the switch model). Starting with version 6.0(2)N2(1), the
default interfacecommand has been added to the nexus world. Compare the release notes of this version.As far as I know, previous versions do not support this or any similar command.
However you won't be able to run NX-OS 6 or later on the 5010 or 5020 platform, it requires the 55xx platform.
