Were using a vm-ware esxi-host on our local server that runs an instance of windows-server 2012-r2. Were remotely controlling over VNC or VMware Remote Console. We want set the server resolution to 1920×1080 because VNC and remote Console use the servers resolution but the option is not available.
There is no product called VMWare Server 5.0, the latest version is 2.0.2, perhaps you mean VMWare's vSphere/ESXi 5.0?
If so then no, there's no support yet as Server 2012 isn't released yet (we don't generally deal with unreleased code on serverfault either by the way), but I know that once Server 2012 is released vSphere/ESXi 5.1 will support it within days/weeks of release.
If you had meant Server 2.0.2 then I wouldn't hold out for a patch any time soon, that's not a particularly active product these days.

Your VM graphics adapter needs more RAM, as ag12 mentioned, but 128mb is overkill. VMware's ram-calculator tool (which is right there on the video adapter settings in ESXi 5.5+) suggets 8.9mb (default is 4mb on new VMs).
I tried 16mb of ram and it was more than enough for 1920x1080 resolution.
