I still have Snow Leopard. I have Xcode 4.2 for iOS development. This morning I upgraded my iPhone and iPad to iOS 5.1.
But Xcode 4.2 is not detecting my device for testing. I could not find the iOS 5.1 SDK image on Apple's developer site, for Xcode 4.2.
I don't want to do upgrade to Lion to get XCode 4.3 at this time.
Will I able to use Xcode 4.2 (on Snow Leopard) for iOS development now?
Yes..You will have separate .dmg available for download when you visit iOS developer center X-Code download link.
Please do note that the X-Code 4.2 will have iOS 5 simulator and library only. If you want lower version simulator and library with X-Code just goto X.Code->Prefrences-> Downloads Tab. In downloads tab you'll have two tabs:
1) Components - Here you will have option to download iOS 4.3 simulator(~600 Mb), iOS 4.0-4.1(~670 MB) Device debugging support, iOS 3.0-3.2.2(686.3 MB) Device debugging support.
2) Documentation- Yoy will have option to download iOS 5.0,XCode 4.2 Developer libaray,Mac OSX 10.7 Core Library.
Install the components which ever you need and there you go..

Assuming you have Xcode installed in /Applications, then you can do this from the command line to start the iPhone Simulator:
$ open /Applications/Xcode.app/Contents/Developer/Platforms/iPhoneSimulator.platform/Developer/Applications/iPhone\ Simulator.app
(Xcode 6+):
$ open /Applications/Xcode.app/Contents/Developer/Applications/iOS Simulator.app
You could create a symbolic-link from your Desktop to make this easier:
$ ln -s /Applications/Xcode.app/Contents/Developer/Platforms/iPhoneSimulator.platform/Developer/Applications/iPhone\ Simulator.app ~/Desktop
(Xcode 6+):
$ ln -s /Applications/Xcode.app/Contents/Developer/Applications/iOS Simulator.app ~/Desktop
As pointed out by @JackHahoney, you could also add an alias to your ~/.bash_profile:
$ alias simulator='open /Applications/Xcode.app/Contents/Developer/Platforms/iPhoneSimulator.platform/Developer/Applications/iPhone\ Simulator.app'
(Xcode 6+):
$ alias simulator='open /Applications/Xcode.app/Contents/Developer/Applications/iOS\ Simulator.app'
(Xcode 7+):
$ alias simulator='open /Applications/Xcode.app/Contents/Developer/Applications/Simulator.app'
Which would mean you could start the iPhone Simulator from the command line with one easy-to-remember word:

To get Xcode 4.2 on Snow Leopard to run code on a device running iOS 5.1 you can do this:
If you have another Mac running Lion and Xcode 4.3.1 you can copy the files from:
Place the copied files in the equivalent place on your Snow Leopard Mac: probably
Similarly copy the iOS 5.1 SDK files found in this directory:
Also copy 'version.plist' from the Lion machine in the iPhoneOS.platform folder to the Snow Leopard machine.
Re-start Xcode on the Snow Leopard machine and re-connect the devices and it seems happy enough.

You might find it more convenient to use Apple's proprietary
