If I like a friend's really old post (2011 – something he posted to me – it actually appeared to me on my "ON THIS DAY" section) would my 'Like' appear on our mutual friend's news feed?
I don't want our mutual friend to know I still miss this other friend and his lovely post to me. But I kinda want this friend to remember it in a subtle way.
Yes, it's possible per person without lists. Here's how he did it, if you want to do it back.
Account (drop down menu at top right) - Privacy - Customize Settings - scroll down - Pick what you want, e.g. "Can see Wall posts by friends" - Customize - type the first few letters of the name in the not bit, select it and Ok. You can check this by viewing as that person, there won't be a box where the normal post to wall box is.
Home => News Feed (Most Recent) => Scroll to the bottom of the page and click Edit Options => Under the Hide remove the blocked friend

If you like a post from the past, it will show up in yours and your mutual friends feed as well.
Also, he will get a notification for the same.
