I've heard about Facebook introducing autoplay videos last year, but I’am only now starting to see them in my news feed. While they initially play without sound unless you click the volume icon, it's still a major annoyance to see things moving around in my news feed. I'd like to put a stop to this if at all possible.

Yes, you can. Go to
https://www.facebook.com/settings?tab=videos
.The page should say Video settings, and an option on the right to disable auto-playing. I just tried it and videos do not start automatically anymore while scrolling.
