Essentially all I want to do is to forward an email from Gmail to another account but when I do Gmail inserts into the new message the original senders details and the email message at the top but I don't want that to appear in the forwarded email.
I know I can manually delete that information but I want this to be an automated process and wondered if there was a script that I could run that would strip out these details before the email was forwarded to the new email address(es)
Is this possible?

That information only appears when you forward an email manually. Using Gmail’s automatic forwarding feature will pass on your email “as-is” (plus a few headers that people won’t normally see). This statement should hold true for all email providers who offer automatic forwarding.
To set this up, click the gear icon, then go to
Settings
→Forwarding and POP/IMAP
. ClickAdd a forwarding address

If you need to only forward specific email messages, you can setup filters instead. You will still need to
Add a forwarding address
, while keepingDisable forwarding
