Google-analytics – restore Google Analytics website profile which has been removed

It's probably best to keep them under one profile to enable you to track bounce rates and internal traffic between the sub domains easier.

Take a look at Advanced Segments and filters for separating your data.

You can also try emailing analytics-support@google.com but that has not delivered good results for me in the past.. Maybe you will be lucky?
