Using Google Docs, I need an X with a line on top, the equivalent to latex \bar{x} and what statisticians call "x bar". I was using an equation field and \overline but it adds the line over the entire equation. Is there a way to do this?

If what you see in the image below does not look bad to you then I suggest because you are not using a suitable style. Entry was "nothing special" (standard entry with default formatting):
but the formulae are Title style.
The first inserts Equation only for the x (the = 30 is just standard text).
The second has the text in parentheses is Normal style
The third has a font sized reduced from the default and x = 25 entered outside the equation.
The fourth has a Normal style x (but not for the upper limit of the sum range)
The character substitution works with any characters you can manage to type with a keyboard.
I just created an auto-substitution that replaces =x with x + y = z and it works just fine.
Just open the "Preferences" menu while in your document and the values you need in the "Replace" and "With" blocks as needed.
Note that it's pure text substitution. It can't do anything else like change fonts.
