Is it possible to bookmark a link that, when chosen, will automatically open up new document (a word processing document in this case) in Google Documents even if I don't have GD open at the time? Having such a link would be a bit of timesaver for me.

Alas, this doesn't seem possible right now; Google Docs doesn't support the auto-updating fields that Office does.
Here is a support thread where you can request this feature, though - I've also posted a reply on it.
As noted by Felipe Alvarez, this is no longer available as an option. Therefore, while this answer was correct two years ago when the product was Google Docs, it no longer applies to the current Google Drive app.
Assuming you mean opening documents from your list, that's in the Google Docs settings on the "General" tab.

- In the current window

You can indeed. Looking at the HTTP traffic, when you click the button to create a new document, it goes to https://docs.google.com/document/create first. I've checked and you can hit this page directly and it will do just what you want.
