I am in a team of people organising an event. There are concurrent workshops and applicants have to select online which one they'd like to attend. .

So in the picture, for the first session, each person only attends one of the strands and not both.

Is there a way of preventing oversubscription, such that if in the Google Form 50 people select Strand B (which is the max we can have for each strand) and submit the form, the option for Strand B disappears in the Form so that it can no longer be selected?

Yes there is a way to prevent subscription, actually there are several ways. Once the limit is reached the option should be removed

manually
by using a method that includes the use of script described by Martin Hawksey (see the reference).
by using an addon like Choice eliminator (mentioned in the reference).

Something I have done to accomplish this(sort of) is to make a certain number of identical questions. It could be 5 or 10 or whatever you see the max number being. Then I add a question at the end of each of those that asks if the person would like to add another.

So, in your case, you would have Book 1, Book 2, and Book 3. All are separate sections in the form. The person fills out Book 1 recommendation and says yes to adding another. They get routed to Book 2 section. They only have 2 recommendations so they answer no to adding another. They then get routed to the final section in the form which just contains a submit button.

I wish the ability to just add another question like you are asking for existed but until Google adds something like that, this should get the job done for you.

Yes, it's possible, but with slight different approach:

Submit one answer for each respondent in order to get one edit URL by each of them, then send the corresponding URL to each respondent.

It will work as a stand alone or as a bounded script.
