In my current GoogleScript, I've got a specific string of text/data copying to a UNIQUE word document (set by date & time of creation).
Is there a way to open and view the last edited/created Google Doc using GoogleScript?
Ideally, I'd have this sequence at the end of the rest of my GoogleScript to launch & view the newly created document for convenience.
I think you should be looking in the direction of using a single form to more or less accomplish both tasks. In other words use the form to populate both the Gantt chart AND the new project sheet.
This can now be accomplished via the Show edit history feature. Right-click on a cell and select "Show edit history". It will show you who made the edit, when it was made, and what changed. You can then go back and forward through cell edits.

Google Apps Script can't open files to be visualized on a web browser (client-side). It could open them only on the server-side.
