I currently have a website hosted on myUserName.github.io. I found out that I can add a new page to it by pushing another repository to its gh-pages branch, but I am not sure how to do this exactly since I am dealing with two different repositories.
If I have a repository named "test", how do I add this my website so I have myUserName.github.io/test?
As mentioned on this thread of the GitHub Google group, repository owners can delete pages from the edit view.
The delete button might be easy to miss, since the buttons from the view mode:

Perhaps GitHub should consider making the interface more obvious (e.g. making the delete button red, or something like that)
For your second app you are wanting to publish, create a new repo using any name (e.g. myapp).
Then publish a branch named gh-pages to that repo.
Your new app should then be available at http://USER.github.io/REPO. So, for our example, username.github.io/myapp.

The convention of creating a repo with the pattern user.github.io is just a shortcut way of doing the steps above, and only works once since repo names are unique.
But the manual steps above work for any number of repositories!

I'm not sure what you exactly want. Github Pages explicitly hosts websites based on Jekyll and is unable to help you in hosting any other kind of backend. If you want to have a website for other purposes and not built out of Jekyll, you need to find somewhere else.
