I wrote a reply https://twitter.com/sxfjkl/status/1340050437131694083 to a message https://twitter.com/pamcakers/status/1340001830999384065 however when I try to view it along with the other replies to that message, it does not show up, even if I tell it to "Show more replies" and "Show additional replies". Why isn't it showing?

You're probably not using the "reply" link.
If you just type in an
@person this is my reply
then there's no in_reply_to parameter set, which results in broken conversation. If you click on the reply link, the in_reply_to parameter is set & the thread is maintained.
Well I think the tweets that are listed (in case of the ones of celebrities) doesn't have any particular order.
Taking this tweet as an example I think notice that most tweets that are listed either are:
- Having a huge conversation related with them i.e many other users reply to that tweet and it's a talk(which may be off topic).
- Have been retweeted (not always the case).
- User who tweeted has many followers.
These were the general trends I observed in this tweet. The listing by Twitter in most cases might be in fact completely random (no concrete way of knowing).

Seems to be working fine and I open your tweet, and I see the parent tweet.
But on opening the users tweet indeed it can't be seen. It can be on a variety of factors. I answered a similar question 7 years back. Have a look.
