I'm looking at this current sensor (datasheet)
I'm a little confused at this notation for hole size.
Pin 5 and 6 have a diameter of 0.6mm while pin 1, 2, 3, 4 have a diameter of 0.25mm ? Is that correct ?
If someone could also explain what this format is "4-0.25×0.5". I've never seen this type of notation before.

I think it could be 0.25mm x 0.5mm (length x width) since the pins look more rectangular vs circular for pins [1,4].
I would call SeeedStudio and talk to their manufacturing (or CAM) department. Different shops write their specs in different ways, and it's costly (in both time and money) to misinterpret what they're trying to say.
In the manufacturing process, first the hole is drilled, and then it is plated. The plating causes the finished hole size to be smaller than the drill size.
However, Advanced Circuits, for example, assumes that the hole size in your design documentation is what you would like your finished hole size to be. So, if your drill file has a 10-mil drill, what you get is a 10-mil finished hole. They automatically increase the drill size so that the finished hole size is what you specify.

It seems to me the seven pins have a diameter of 0.6 mm +/- 0.1mm with a spacing of 1.27 mm between them. It's quite common for dimensions to be prefixed by "7 x" etc to indicate the same dimension applies to multiple items.

I think that diagram gives the pin sizes, not the recommended hole size. Pins 1 - 4 are 0.25mm x 0.5 mm. For the 3 amp version, pins 5 and 6 are 0.6 mm diameter.
The drawing below the one you show above shows pins 1 - 4 as small rectangles.
